In 1979, I began sampling Ribs from various Rib Joints in and around Chicago, Illinois.
During that time, I tried some of the best Ribs of my Life from a Rib Joint on the South Side of Chicago called "Mr. BBQ". Mr. BBQ (James Wright) and I became good friends and soon he was showing me pictures of his early Rib Selling Days in the 1930's & 40's when he used a Push Cart-Grill Stand to sell his Ribs up & down 47th Street on Chicago's South Side. Soon he began to introduce me to his Grilling Technique, as I began experimenting with my recipe. In the early 1980's, Mr. BBQ had passed on and the business died with him.
Although Mr. BBQ has passed, I loved his Ribs so much that I thought of them as the Best BBQ I had ever had in my life! I held on to what I've learned from him and continued to sample other Ribs in Chicago, the country, & even Jamaica. Some great & some not so Great.
After a few years of experiencing many different kinds of Ribs, and studying the old rib shacks in the South from the 30's & 40's, I had a good Idea of what great AUTHENTIC Ribs taste like and what it takes to make them. Soon I considered myself to be a pretty good Rib Connissuer and with Mr. BBQ's Tradition in mind, I began Grilling Ribs and implementing what I've learned, experimenting and only making minor adjustments while perfecting my Grilling Technique.
By 1997, I decided my recipe was perfected and began featuring them at BBQ's and eventually began selling them by having RIB SALES. Everyone loved them soooo much that virtually no one was willing to put BBQ sauce on them! People commented on how the Ribs are so good that they did not need sauce on them!
"WOW!", I thought! That's incredible! I began to double up on the BBQ's attracting even more people to get turned on the Unique Taste & Phenomenon of not wanting sauce on my Ribs!
The comments continued to grow... "You're right, you don't need sauce on your RIBS!"..."These are the best Ribs I ever had in my life!"... "YOUR RIBS KICK ASS!"
I Began to have the vision of sharing my Ribs with the whole World and even bringing back the Original BBQ Joints or RIB SHACKS.
In the summer of 2003, I began a massive marketing campaign, hired an agent, and began competing in Local Rib contests. Thus the name "BACK IN THE DAYS BBQ" was born!

In 2001, I competed in WCKG's (a Chicago major market radio station) Ribs That Rock Competition placing 6 out of a field of 30. By 2005 I continued on the BBQ Circuit competing in contests in and around the Chicago placing as high as 3rd place! I even sold them at Rib Sales in Milwaukee Wisc., and are still considered by even more Rib fans & connoisseur's to be the Best RIBS they ever had and - or- the Worlds Greatest Ribs!
